This is not a Microplane. This Japanese grater (oroshigane) works differently: the ultra-fine, non-perforated surface breaks down cell walls as you grate, turning ginger, garlic, daikon, or wasabi into a smooth, moisture-rich paste — releasing natural juices and compounds in a way that no knife can replicate.
- Daikon oroshi neutralises heavy flavours in grilled meats and fried food.
- Grated apple and onion tenderise and sweeten marinades and salad dressings.
- Grated ginger and turmeric goes directly into dressings, sauces, and soups without leaving fibrous chunks behind.
- Freshly grated garlic and onion release far more flavour and juice than pre-chopped — a little goes a long way.
Rany’s Tip: Squeeze the ginger paste. You'll be surprised how much juice comes out of just 1cm of ginger root — divine in drinks, marinades, and dressings.
